Fancy Oat-Nut Cookies

1/2 cup ground walnuts or pine nuts
2 cups rolled oats
1 1/2 cups whole wheat pastry flour or cake flour
1/2 tsp. baking soda
3/4 cup oil
1 cup sweetener*
2 eggs
1/2 tsp. vanilla
1/2 tsp. almond extract


Preheat to 350. Grease baking sheets.

Blend together walnuts and oats for 2 minutes. Add flour and baking soda and mix well. Set aside. Combine oil and sweetener and process until well creamed. Add eggs, vanilla and blend well. Add flour mixture and mix by hand until well combined. Drop batter onto baking sheet, allowing 1 inch between cookies.

Bake 10 to 12 minutes or until browned. Cookies will be somewhat soft but will firm up when cooled.
Cool on wire racks.

*Sweetener options:
1/2 cup sweetener in recipe equals:
1/2 cup maple syrup
1/2 cup honey
1/3 cup molasses
1/2 cup black sugar
1/2 cup coconut sugar
1/2 cup fruit juice concentrate


To use the following, the amounts of liquid will have to be reduced or the amount of dry ingredients increased. Adding ground nuts, sees, coconut or carob flour or arrowroot for best results.

1 1/2 cups barley malt extract
1 cup sugarless fruit jelly
1 1/4 cups rice syrup
2 cups fruit juice
1/2 cup fruit juice and 1/2 c carrot juice
1/2 cup unsweetened frozen juice concentrate, such as orange juice
1 1/4 cup dried fruit puree: including fruits nectarines, peaches, apricots, prunes, pears, apples, mangoes, paw-paws, raisins, sultanas, currants, figs, dates, Chinese dates, pineapples and bananas.
