Giant Oatmeal Cookies

1 1/4 cups flour
1/2 tsp. salt
1/2 tsp. baking soda
1 cup firmly packed brown sugar
3/4 cup butter or margarine
2 eggs
1 tsp. vanilla
2 1/2 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup (6 oz) semi sweet chocolate chips
1/2 cup chopped nuts


Preheat to 350. Grease 2 large cookie sheets.

In a small bowl, combine flour, baking soda and salt, mixing well.

In a large bowl, beat the sugar and butter until light and fluffy. Add eggs and vanilla, blending well. Add dry ingredients and mix well. Add oats, chocolate chips and nuts, mix well.

Divide dough in half. Spread each half on each cookie sheet, spreading to 3/4 inch thick. Bake 17 to 20 minutes or until lightly browned.

Makes two 11 inch cookies.

Variation:

Drop dough by rounded tablespoonfuls onto greased sheets and bake 10 to 12 minutes. Makes 3 dozen cookies, about 2 1/2 inch in size.
