Drop Cookies Ginger Snaps

Ginger Snaps (12 large cookies)

1/2 cup flaxseed meal
2/3 cup sugar
1 cup flour
1/4 cup soy flour
1 tsp baking powder
1 tsp cinnamon
2 Tblsp ground ginger
1/2 cup soy milk
1/4 cup molasses

Mix all dry ingredients in a large bowl and whisk to combine. Add soy milk and molasses. Stir. Spoon large Tblsp. onto non-stick or oiled cookie sheet. Flatten each with damp glass or fingers. Bake one hour at 300 until lightly brown. Remove from sheet to cool on rack.
