Kansas Sunflower Cookies

1 1/4 c flour
1 tsp baking soda
1/2 tsp baking powder
1 c butter, softened to room temperature
1 c sugar
1 c packed brown sugar
2 eggs
1 tsp vanilla
2 c quick oats
1 c shredded coconut
1 c shelled sunflower seeds
Combine flour, baking soda and baking powder. Set aside. Using an electric mixer, beat butter for 30 seconds. Scrape bowl. Add both sugars and beat until well mixed. Add eggs and vanilla, mix well. Add flour and mix until combined. Add oats, coconut, and sunflower seeds.
Line cookie sheets with foil and lightly spray with oil. Drop dough by rounded tablespoons, 3 inches apart.
Bake at 375 for 8 or 9 minutes or until lightly browned. Let cool on the sheet for 5 minutes. Remove to wire racks and cool completely.
Makes 60 cookies.
