Drop Cookies Key Lime Recipes

KEY LIME COOKIES #1

1/2 cup butter
1 egg
2 tsp. grated rind
1 tsp. baking powder
1 1/2 c. powdered sugar
2 tbsp. lime juice
1 c. flour
1/4 tsp. salt.

Beat together the butter and sugar, add egg, juice, rind. Mix may appear curdled.

Stir in flour, baking powder, and salt. In bowl, place 2 cups crushed cornflake crumbs and drop batter by teaspoons in crumbs and toss to coat.

Place on ungreased cookie sheet and bake at 350 degrees for 15 minutes. Cool on wire rack.

KEY LIME COOKIES #2

1/2 cup butter or margarine
1 cup white sugar
1 egg plus 1 egg yolk
1 teaspoon baking powder
1 1/2 cups all-purpose flour
1 teaspoon salt
1/4 cup fresh lime juice
1 1/2 teaspoons grated lime peel (green part only)
1/2 cup confectioners' sugar

Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets. In a large bowl, mix butter, sugar, egg and egg yolk until creamy. Mix in the flour, baking powder, and salt. Add lime juice and lime peel. Form dough into 1/2 inch balls. Place on prepared cookie sheet and bake until lightly browned, 8 to 10 minutes. Remove to wire rack. While still warm, sift confectioners sugar over cookies. Makes 3 dozen.
