Lemon-Cardamom Drops

4 oz nonfat cream cheese, softened
2 tbsp butter, softened
1 1/4 c sugar, divided
2 egg whites
1 tbsp grated lemon zest
1 tsp vanilla
1/2 tsp lemon extract
2 1/4 c flour
3/4 tsp baking powder
1/2 tsp ground cardamom
cooking spray

Icing:
3/4 c powdered sugar, sifted
3 tsp skim milk
1/4 tsp vanilla


Beat cream cheese, butter and 1 c sugar until fluffy. Add egg whites, lemon zest and both extracts; beat until smooth. Combine dry ingredients, including cardamom, and add to to creamed mixture. Stir until a soft dough forms.

Preheat to 350.

Drop teaspoonfuls of cookie dough into remaining 1/4 c sugar. Roll into balls and place 2 inches apart on lightly gresed cookie sheets. Flatten balls with the bottom of a glass dipped in sugar. Bake 5 to 7 minutes or until the cookie bottoms are lightly browned. Transfer cookies to a wire rack with waxed paper underneath to cool.

Icing: Combine all ingredients, stir until smooth. Drizzle over cookies. Allow icing to harden and store in an airtight container.
