Meringue Cookies.
4 egg whites
1 cup sugar
1 cup pecan pieces
1/8 tsp salt
1 tsp. vanilla
Add salt to the egg whites beat until stiff.adding the sugar slowly while beating.Fold in remaining ingredients, Drop by teaspoon on ungreased cookie sheet. Bake for 1 hour and 15 min in a 225 degree oven . Turn off oven and leave cookies in to cool or overnite. Bake on lowest rack in oven.
You can add food coloring, Chocolate chips, coconut or what ever to change them. I like them with only nuts.
