1 cup shortening
2 cups sugar
3 eggs, well beaten
about 4 cups cake flour
1 cup mincemeat
1 teaspoon baking soda
1/4 teaspoon ginger
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup chopped nuts.
Preheat oven to 375° F. and grease cookie sheet.
Cream shortening and sugar. Add the eggs and enough of the flour to keep it from curdling. Mix well and add the mincemeat. Reserve 1/2 cup flour.
Sift remaining flour with salt, soda and spices and add. The exact amount of flour depends on the amount of moisture in the mincemeat, however the dough should be about the consistency of rolled dough.
Add the chopped nuts and drop by teaspoons onto a greased cookie sheet. Allow 2" between cookies. Bake at 375ºF. for 12 minutes. Makes 96 (3-inch) cookies.
