Mocha Snowcaps
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
3 squares (1-ounce each) unsweetened baking chocolate
1/4 cup hot coffee
1/2 cup (1 stick) butter
1 cup firmly packed brown sugar
1 egg
1/2 cup sour cream
1 cup flaked coconut, divided
Chocolate Frosting
1 square (1 ounce) unsweetened baking chocolate
1 tablespoon unsalted butter
2 tablespoons sour cream
1 cup confectioners' sugar
Preheat oven to 375º. Grease cookie sheet.
In a small bowl, combine flour, salt, and baking soda: set aside.
In a small saucepan, melt chocolate in coffee over low heat; set aside to cool.
In a large bowl, cream together butter and brown sugar. Add egg and cooled chocolate mixture and beat well. Add sour cream and flour mixture alternately, mixing well. Add 1/2 cup of coconut and mix well.
Drop by heaping teaspoonfuls onto greased cookie sheets.
Bake for 10 to 15 minutes.
Meanwhile, in a small microwaveable bowl, melt chocolate, butter and sour cream on low power in microwave.
Mix well, then slowly blend in confectioners' sugar and mix again.
Frost cookies while warm and sprinkle tops with remaining coconut.
Note: If consistency of frosting seems too thick, mix in a few drops of heavy cream or water.
