Moist Oatmeal Cookies
2 c. raisins
2/3 c. shortening
1 c. sugar
2 eggs
2 tsp. cinnamon
1 tsp. allspice
1/3 tsp. salt
2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 c. old fashioned oats
1/2 c. nuts (optional)
1/3 c. raisin liquid*
1-1/2 tsp. vanilla
Preheat oven to 350 degrees.
Grease cookie sheets.
Put raisins in saucepan and cover with water. Boil 2 minutes.
Drain and reserve *raisin liquid.
Set raisins aside to cool.
Cream together shortening and sugar; add eggs and beat well.
Sift dry ingredients together and add alternately with raisin liquid, oats and raisins to shortening mixture.
Mix well.
Add nuts (if used) and vanilla.
Drop on greased cookie sheet. Bake at 350degrees for 10-12 minutes.
