1 cup coconut
3 cups oats
2 cups sugar
6 Tbsp. (slightly heaping) cocoa
1/2 cup margarine
1/2 cup milk
1/2 tsp. vanilla extract
Grease or line with foil, two cookie sheets.
Premeasure coconut and oats. Set aside. In a 4 quart saucepan combine sugar, cocoa, margarine and milk. Bring to a boil over medium-high heat, stirring slowly. Let boil one minute. Remove from heat. When boilng stops, add vanilla, stir. Stir in coconut and oats until well coated with chocolate mixture. Drop by teaspoonfuls onto prepared cookie sheets. Chill for at least one hour. Keep covered in refrigerator.
NOTE: If preparing these on an electric stove, use the large burner. For some reason I can't get these cookies to set
if the mixture doesn't heat up fast enough.
