Oatmeal Cookies with Dates, White Chocolate, and Bits O’Brickle
1-3/4 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 cup butter (2 sticks), softened
1 cup light brown sugar, packed
3/4 cup sugar
2 eggs
2 tsp. vanilla
1 cup pitted, chopped dates
3-1/2 cups quick-cooking or old-fashioned oats
1 cup white chocolate morsels
1 cup Heath Bits O’Brickle toffee pieces
Heat oven to 350 degrees. Combine flour, baking soda, baking powder and salt.
Combine butter, sugars, eggs and vanilla in a mixing bowl and beat on medium speed until well blended. Add flour mixture and mix on low (or use a spoon) to blend. Add dates, oatmeal, white chocolate morsels, and toffee pieces.
Drop by tablespoons onto a cookie sheet, leaving about 3 inches in between. Bake 6 to 9 minutes. Remove from oven and let cookies stand about 2 minutes before removing to cookie sheet for cooling.
Makes about 5 dozen cookies.
