Drop Cookies Orange Almond Peel Macaroons

Peel of 1 large navel orange
2 T potato starch or corn starch
1/2 cup sugar
1 cup blanched almonds
1 t cinnamon
1/2 t nutmeg
2 egg whites

Processor method

Pre-heat oven to 350* and line a cookie sheet with greased foil.

Remove peel from orange with sharp knife or zester, trying not to get any white pith (it's bitter)

Beat egg whites and set aside.

Insert metal blade. Place peel, starch and sugar in work bowl. Process for 30 seconds.

Add almonds and spices and process until almonds look like bread crumbs but not too fine (about 3 minutes)

Remove mixture to a large bowl and fold in egg whites. Form into walnut sized balls, handling lightly.

Place balls on cookie sheet about 3 inches apart, they will spread out when baking.

Bake at 350* for 5 minutes. Turn oven to 400* and continue baking until cookies are lightly browned (about 10 to 12 minutes)

Cool before removing from cookie sheet.

Makes about 2 dozen
