Pecan and White Chocolate Chip Oatmeal Cookies
1 cup honey
1/2 cup vegetable shortening
1 1/2 cups all-purpose flour, sifted
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups quick oats
4 tablespoons sour milk*
2 cups white chocolate chips
1 cup chopped pecans
Preheat the oven to 325° F.
Cream the honey and the shortening. Add the egg and beat well.
Combine the sifted flour with the baking soda, salt and the oats. Mix the milk and the flour mixture alternately into the honey mixture. Stir in the white chips and the pecans. Drop by the tablespoonful onto a non-stick cookie sheet.
Bake for 12 to 15 minutes, or until golden.
Makes about 21/2 dozen cookies.
*Sour milk: Put 2 or 3 drops of lemon juice in 1 cup of milk
