Plump Sugar Cookies

1 cup shortening
2 cups sugar
2 eggs -- separated
1 1/2 teaspoons vanilla
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
Preheat oven to 375° F. and lightly grease cookie sheet.
Cream shortening and sugar well. Stir in egg yolks and the vanilla.
Sift dry ingredients together and add alternately with buttermilk.
Beat egg whites stiff and fold in. Drop by tablespoonful onto lightly greased cookie sheet.
Bake at 375 F. for about 17 minutes.
