RHUBARB COOKIES
1 c. sugar
1 c. shortening
2 eggs
1 c. cooked rhubarb, sweetened to taste
3 c. flour
1 c. quick oats
1/2 tsp. salt
2 tsp. cinnamon
1 c. chopped nuts
2 c. raisins
2 tsp. baking soda
Cream shortening and sugar. Blend in eggs. Add rhubarb. Mix thoroughly. Then sift together dry ingredients. Add raisins and nuts. Drop on cookie sheets. Bake in preheated oven at 350 degrees for 18 - 20 minutes.
