Soft and Chewy Cookies

1 cup butter (no substitutes)
3/4 cup packed light brown sugar
1/2 cup white sugar
1/4-cup light corn syrup
1 egg
2 tsp vanilla extract
2 1/2 cups all-purpose flour
1 ts baking soda
1/4 ts salt
1 pkg (10 or 12-oz) Hershey’s chips


Preheat oven to 350°.

In mixer bowl beat butter and sugars until light and fluffy. Add corn syrup, egg and vanilla. Beat well, set aside.

In another bowl stir together flour, baking soda, and salt. Gradually add butter, beating well. Stir in chips. Drop by the spoonful onto ungreased cookie sheet. Bake 8-10 minutes or until lightly brown and almost set. Cool slightly; remove from cookie sheet to wire rack. Cool completely Cookies will be softer second day.

Makes 3-1/2 cookies


Sweet Chocolate Glaze:
3/4 cup sugar
2 tb cornstarch
1 cup water
2 squares (2 oz) German sweet chocolate, cut up
1 1/2 ts vanilla


In a small saucepan combine the sugar, cornstarch and dash salt. Stir in water and chocolate. Cook; stir till chocolate is melted and mixture is thickened. Cook; stir 2 minutes more. Remove from heat; stir in
vanilla. Cover surface with clear plastic wrap or waxed paper. Let stand 10 to 15 minutes or till slightly cooled and of spreading consistency. Spread glaze on top. Makes 1 1/2 cups glaze.
