White Chocolate Macadamia Nut Cookies
2 1/4 Cup flour
1 teaspoon baking soda
1 teaspoon salt
1 cup margarine, softened
3/4 cup sugar
3/4 cup brown sugar
1/2 teaspoon vanilla
1/2 teaspoons rum or almond flavoring
6 (1 oz ) squares chopped into fairly large chunks (food processor is not recommended)
1 (4.5 oz) can or jar of macadamia nuts, coarsely chopped
Preheat oven to 375 degrees.
In a medium bowl, combine flour, baking soda, and salt; set aside.
With an electric mixer combine margarine, sugar and brown sugar, beating until smooth and slightly fluffy.
Add eggs and vanilla and rum or almond flavoring and mix.
Gradually add flour mixture.
Stir in nuts and white chocolate chunks.
Drop by rounded teaspoon onto a parchment lined cookie sheet and bake until golden brown on top, about 10 to 12 minutes.
Remove from baking sheet and cool on racks.
