White Chocolate Macadamia Nut Cookies
1/2 cup butter, softened
1/2 cup shortening
3/4 cup firmly packed brown sugar
1/2 cup sugar
1 large egg
1-1/2 teas. vanilla
2 cups flour
1 teas. baking soda
1/2 teas. salt
1 (6 oz.) package white chocolate pieces
1 (7 oz.) jar macadamia nuts, coarsely chopped
Preheat oven to 350° F and lightly grease cookie sheet.
Beat butter and shortening until soft and creamy, gradually adding sugars, beating well. Add egg and vanilla, beat well.
Combine flour, soda, and salt; gradually add to butter mixture, beating well. Stir in white chocolate and
macadamia nuts.
Drop by rounded teaspoonfuls 2 inches apart on lightly greased cookie sheet.
Bake in preheated oven at 350 degrees for 8 to 10 minutes or until lightly browned. Cool slightly on cookie sheets; remove to wire racks, and let cool completely.
