Alternative Whoppee Pies

Chocolate:
2 Cups sugar
l Cup shortening
2 eggs
4 Cups flour
l Cup baking cocoa
2 tsp. vanilla
l tsp. salt
l Cup sour milk ( or add 1/2 teas. vinegar to milk)
2 tsp. baking soda
l Cup hot water

Cream sugar and shortening. Add eggs. Sift together flour, cocoa and salt. Add to creamed mixture alternantely with sour milk. Add vanilla. Dissolve soda in hot water and add last. Mix well.

Drop by rounded teaspoons onto greased cookie sheet. Bake 400 degrees for 8-10 minutes. Make sandwiches from 2 cookies filled with Whoopie Pie filling. Makes 4 dozen sandwich pies.

Oatmeal Whoopie Pies (my favorite!)
2 Cups brown sugar
3/4 Cup butter, margarine or shortening
2 eggs
1/2 teas. salt
1 teas. cinnamon
1 teas. baking powder
3 Tbsp. boiling water
l tsp. soda
2 1/2 Cups flour
2 Cups oatmeal
Cream sugar and shortening. Add eggs, then add salt, innamon and baking powder. Add soda dissolved in hot water.Gradually add flour and oatmeal. Drop batter by heaping teaspoons onto greased cookie sheet. Bake at 350 degrees for 8-10 minutes or until brown. Use filling to fill pies.

Pumpkin Whoopie Pies
2 Cups brown sugar
1 Cup vegetable oil
l 1/2 cups canned pumpkin
2 eggs
3 cups flour
l tsp. salt
l tsp. baking powder
l tsp. baking soda
l tsp. vanilla
l 1/2 Tbsp. cinnamon
1/2 Tbsp. ginger
1/2 Tbsp. ground cloves

Cream sugar and oil. Add pumpkin and eggs. Add flour, salt, baking powder, soda, vanilla and spices. Mix well. Drop by heaping teaspoons onto greased cookie sheets. Bake at 350 degrees for 10-12 min. Use filling to fill pies.

filling recipe: (yum!!)
2 egg whites, beaten
4 Tbsp. milk
2 tsp. vanilla
4 cups powdered sugar
1 1/2 cups shortening

Mix together egg whites, milk, vanilla, and 2 cups sugar. Then beat in shortening and remaining 2 cups of sugar. Spread dab of filling on flat side of cooled cookie. Top with another cookie to form a sandwich pie
