White Chocolate, Chocolate Cookies (Chocolate Cookies with White Chocolate Chips)

1 cup unsalted butter
1 cup white sugar
3/4 cup packed brown sugar (I used dark brown)
2 eggs
1 1/4 cups unsweetened cocoa powder (I used Hershey's)
1 3/4 cups all-purpose flour
2 teaspoons baking soda
2 cups white chocolate chips (I used about 1 cup - use original amount if you want chips in each bite)


Preheat oven to 350 degrees F (175 degrees C). Decrease temperature by 25 degrees for dark pans. Grease cookie sheets.

In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition. (Then add the vanilla, if using). Combine the cocoa, flour, and baking soda; gradually stir into the creamed mixture. Finally, fold in white chocolate chips. *(Note: dough is very soft and sticky and difficult to handle. Refrigerate until more manageable before dropping onto cookie sheets, if desired). Drop by rounded spoonfuls (tablespoonfuls) onto the prepared cookie sheets. (Place them at least 2 inches apart).

Bake for 8 to 10 minutes in the preheated oven, until puffy but still soft. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Makes 3 dozen (36 servings).
