Baked Choco-Covered Cherry Cookies
Dough:
1/2 c. softened margarine
1 c. sugar
1 egg
1 1/2 tsp. vanilla
1 1/2 c. sifted flour
1/2 c. Hershey's cocoa
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. soda
Frosting:
1 c. (6 oz.) chocolate chips
1/4 tsp. salt
1/2 c. sweetened condensed milk
1 to 1 1/2 tsp. cherry juice
Mix together margarine and sugar. Add egg, vanilla, flour, cocoa, salt, baking powder and soda. Dough will be stiff. Shape dough with teaspoon in 1 inch balls. Place 2 inches apart on ungreased cookie sheets.
Push 1 cherry halfway in each ball. When all cookies are molded and cherries are pushed in, prepare frosting.
Frosting: In a small saucepan over low heat melt chocolate pieces with condensed milk, stirring constantly. Remove from heat. Add remaining ingredients. Stir until smooth.
Immediately frost each cherry by spreading 1/2 teaspoon frosting over cherry. Frosting will spread over cookie slightly during baking.
Bake frosted cookies at 350 degrees for 8 to 10 minutes. Store tightly covered. Change pans around after 5 minutes of baking and finish baking.
