Biscotti Nut Cookies
Makes 48 cookies

1 cup hazelnuts
1/2 cup margarine or butter
1/4 cup honey
2 eggs
1 1/2 cups all-purpose flour
2 tsp. baking powder


Preheat to 350 F.

Roast hazelnuts in the oven just until browned. Allow nuts to cool enough to handle. Set aside half of the nuts. Grind the other half of the nuts in a blender.

Beat together the margarine or butter, honey, and eggs until light and fluffy.

In a separate bowl, mix together flour, ground nuts, and baking powder. Gradually add dry ingredient mixture to the butter/honey/egg mixture. Using a mixer on slow speed,beat until blended. Stir in the reserved whole nuts. The dough will be soft. Divide the dough in half.

On a lightly oiled baking sheet, shape each half into a 12-inch-long strip, 2 to 2 1/2 inches wide.

Bake for 15 minutes, or until golden brown. Remove from the oven and cut diagonally into 1/2-inch-thick slices. Turn each slice on its side. Bake for 10 to 15 minutes more, until golden. Cool completely on a wire rack.
