Butter Cookies

1 cup melted butter, cooled
1/4 cup sugar
1/2 teaspoon vanilla (or almond) extract
1 teaspoon baking powder
2 1/3 cups all purpose flour, approximately
1/4 cup finely chopped walnuts or blanched almonds
Confectioner's sugar

Filling:
1 cup ground walnuts
2 tablespoons sugar
1/2 teaspoon cinnamon
1 egg white beaten stiffly

Thoroughly mix together.


Preheat oven to 350° F.

Combine sugar, butter, baking powder and vanilla in a bowl and mix well. Add flour until a soft dough is formed, but not enough flour that dough cracks when you pick it up and mold it.

Take a walnut size piece of dough (or larger, up to you) and form into a ball. Make an indentation in it and place about a teaspoonful of the nut mixture in the hollow. Press edges together to seal. Make into rounded or egg shape and place on an ungreased baking sheet.

Bake in a preheated 350 degree oven for about 15-20 minutes. Remove from oven and cool slightly.

Sift confectioners sugar over slightly warm cookies. Allow to cool thoroughly before storing.
