Formed Cookies Caramel Pecan

Caramel Pecan Cookies

Ingredients:
1 cup butter or margarine
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 1/4 cups all-purpose flour
3/4 cup cocoa
1 teaspoon baking soda
2 teaspoons vanilla extract
1 cup chopped pecans
1 tablespoon white sugar
9 ounces chewy carmels in milk chocolate (like Rollos)


Directions:

Beat softened butter at medium speed until creamy. Add sugars, beating well, and eggs, beating well.

2 Combine flour, cocoa, and baking soda. Add to butter mixture, beating well. Stir in vanilla and 1/2 of the pecans. Cover and chill 1 hour.

3 In a separate bowl, combine the remaining 1/2 cup pecans and 1 tablespoon of sugar; set aside.

4 Preheat oven to 375 degrees F.

5 Press 1 tablespoon of cookie dough around each chocolate coated carmel, forming a ball. Dip one side of each ball in
pecan mixture; and place pecan side up , 2 inches apart on ungreased cookie sheet.

6 Bake at 375 for 8 minutes ( cookies will look soft ). Cool on baking sheet one minute, then remove to wire racks to
continue cooling. Makes 4 dozen
