Formed Cookies Chocolate Coffee Batons

Chocolate Coffee Batons

2 1/4 cups all purpose flour
3/4 cup light brown sugar, packed to measure
1/2 cup granulated sugar
1/2 cup lightly salted butter or margarine at room temperature
1/4 cup heavy cream
1 tablespoon instant coffee powder
1/2 teaspoon each salt and baking powder
1 cup semi sweet chocolate chips melted with 2 teaspoons solid vegetable
shortening
1 1/2 cups finely chopped almonds, pecans, walnuts or hazelnuts


Put all ingredients except chocolate and nuts in large bowl of an electric mixer and beat until thoroughly blended.

Cover dough and chill 1 hour or longer until firm enough to shape.

Heat oven to 375 degrees.

Using rounded teaspoonful for each, roll dough into 3 x 1/2 inch logs and place 2 inches apart on an ungreased baking sheet.

Bake about 7 minutes or until golden brown.

Cool on wire rack.

Dip ends of cookies in melted chocolate and then in chopped nuts.

Makes about 5 dozen cookies.
