Cocoa Madness Cookies
(a chocoholic's dream)

1/2 cup + 1 Tbsp. vegetable oil
1 2/3 cups sugar
1 cup cocoa powder, Dutch process if possible (it's the dark one)
4 large eggs
1 tsp. vanilla
1 3/4 cups flour
1 tsp. baking powder
1/2 tsp. salt
Confectioners Sugar for rolling.


Using a mixer or whisk, combine oil and eggs, mix in sugar and vanilla. Sift cocoa and mix into wet mixture until well combined and no cocoa lumps are remaining.

Sprinkle baking powder and salt over cocoa mixture, add flour and stir with a spoon until well combined. The dough will be very runny. Chill dough several hours or overnight, it will firm up enough to handle.

Preheat oven to 325 degrees F.

To make cookies, form into large balls (size of a golf ball), roll dough balls in powdered sugar and place on cookie sheet 2 inches apart, smush cookied down slighly. Bake at 325 degrees for about 15 minutes.
Cookies will puff up and spread a little bit, then deflate a little when cooling.
When cooked remove from pan and cool on rack.

These big brownie-like cookies are slightly crisp on the outside and so soft and oh so chocolatey inside with a baked on confectioners sugar crackle coating!

Makes approximately 15 (3 inch) cookies.

These cookies can be made smaller, you could also bake them without the sugar dip and then drizzle with white chocolate when they are cooled.

If you want more cake like cookies, add 1 tsp. of baking powder more and cook at 350 deg. They will still taste great, but you will have a slightly different product.
