Contemporary Tea Cakes

1/2 cup unsalted butter
1 cup sugar
1/2 cup vegetable oil
1 large egg
1 teaspoon white vinegar
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract

Preheat oven to 350 degrees.

Cream together butter, sugar, and oil. Beat together egg and vinegar and combine with butter mixture.

Sift together flour, salt, and soda. Stir into butter mixture and add vanilla. Dough will be stiff.

Pinch off small balls of dough and arrange on greased cookie sheets. Flatten dough balls with fork and bake until edges are light brown, 5 to 7 minutes.
