Eggnog Cookies
3/4 cup butter
1/2 cup sugar
1/4 cup brown sugar
1 egg
1/2 teaspoon vanilla
1/4 teaspoon salt
2 cups flour
Filling:
1/4 cup butter
1 cup confectioners sugar
1 1/2 teaspoons rum extract
Preheat oven to 350 degrees F. Cream together softened butter and sugars. Beat in egg and vanilla. Stir in salt and flour. Roll dough into 1" balls, if dough is hard to handle chill for 1/2 hour. Place onto ungreased cookie sheet 2" apart. Press down centers with thumb. Bake at 350 degrees for 12 minutes or until bottoms are golden. Remove from cookie sheet and cool completely.
For filling, cream together softened butter and confectioners sugar. Stir in rum. Spoon 1/2 tsp. onto each cookie. Sprinkle with nutmeg. If filling is too loose, chill for 15 minutes before spooning onto cookies.
