Grandma's Double Ginger Crackle Cookies

3/4 cup shortening
1 cup granulated sugar
1 egg
1/4 cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup chopped candied ginger
1 tablespoon ground ginger
1 teaspoon freshly ground cinnamon
1 teaspoon ground cloves
extra granulated sugar
Preheat oven to 350° F.
In large bowl cream together shortening and sugar. Beat in egg and molasses.
In a separate bowl, mix together all other ingredients. Blend into the creamed mixture. Shape into small balls (about 1" in diameter). Roll in extra sugar.
Place 2" apart on a greased cookie sheet. Bake at 350 F for 8-10 min. or until golden brown. Don't overbake---cookies should be slightly soft when removed from the oven.
Let cool on cookie sheet for a few minutes, then remove to racks to cool completely.

Ginger Cookies

1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 cup butter -- (2 sticks)
1 egg
1/3 cup molasses
2 teaspoon ground ginger
1/2 teaspoon ground allspice
1 teaspoon cinnamon
2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon white pepper
2 1/4 cups flour
Granulated sugar for coating
Cream sugars and butter together for 2 minutes. Beat in egg and molasses. Add rest of ingredients.
Refrigerate dough for 30 minutes
Preheat oven to 325. Roll into balls, roll in remaining 1/2 sugar. Flatten them slightly with 2 fingers or bottom of glass.
Bake for 12 minutes.
