Ice Cream Kolachki
1 pound butter (no substitutes)
1 pint vanilla ice cream. (soft)
4 cups all purpose flour, don't sift
Apricot, strawberry and/or blackberry preserves
Preheat oven to 350° F.
Soften butter and ice cream; cream together until creamy and smooth.
Gradually add flour until all is used; dough will be stiff.
Spray cookie sheet lightly.
Pinch off small ball of dough , about the size of a quarter.
Put on cookie sheet, flatten with thumb and fill center with preserves.
(Use a baby spoon as it's not as messy.)
Bake for 20-25 minutes.
When cool sprinkle with powdered sugar.
