Macaroon Sugar Cookies

1 cup sugar
1 cup brown sugar
1/2 cup shortening
1/2 cup butter or margarine -- softened
1 teaspoon vanilla
1 egg
2 cups flour
1 cup Hungry Jack potato flakes
1 teaspoon baking soda
1/2 teaspoon salt
1 cup flaked coconut
1/2 cup chopped nuts -- optional
Preheat oven to 375 F. Combine all ingredients until well blended.
Shape dough into 1-inch balls; place 2-inches apart on ungreased cookie sheet. Flatten with bottom of glass that has been dipped in sugar.
Bake 6 to 8 minutes or until golden brown.
Makes 4-5 dozen
