Formed Cookies Mega Ginger Cookies

Mega-Ginger Cookies

1/2 cup chopped crystallized ginger
3/4 cup sugar
6 tbs butter room temp
1/4 cup molasses
1 large egg
2 cups all purpose flour
2 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp ground nutmeg

1. In a food processor whirl ginger and 1/3 cup sugar until ginger is finely ground. Pour out of container.

2. Put butter and 1/3 cup sugar in food processor and whirl until fluffy.

3. Add ginger mixture, molasses, and egg; mix well.

4. Mix flour, soda, cinnamon, and nutmeg. Add to butter mixture, whirl to blend well

5. Cover dough and chill until firm to the touch about 1 hour.

6. Shape dough into 1 inch balls and coat in remaining sugar. Place 2 to 3 inches apart on nonstick or oiled baking
sheets.

7. Bake in a 350 oven until slightly darker brown, 11 to 12 minutes total.
