Melting Moments:
(Adapted from "The Australian Womens' Weekly Best Ever Recipes." The family love these. I cheat, as usual, and
often make the 'biscuit mix' in my Magimix food processor).
125g / 4 oz butter
2 tabs icing (confectioners') sugar
½ cup cornflour
½ cup plain (all purpose) flour
125 g / 4 oz dark chocolate
15g (1/2 oz) solid white vegetable shortening (eg. copha/ ? crisco)
Orange Cream
30g / 1 oz butter
3 tabs. icing (confectioners' ) sugar
1 teasp. grated orange rind,
2 teaspn. Orange juice
Cream butter, sugar until light and fluffy. Add sifted flours. Mix well.
(Some recipes, here, suggest you use a star-shaped -tipped piping bag to pipe 'pretty' shapes). Personally, I go with
the "roll teaspoon-fuls of mixture into walnut sized balls.
Place on lightly greased oven trays , press down with a fork and 'rough up' surface with the fork. Bake in mod. oven (375-400F/ 190-200C) for 10-12 mins or until golden
brown. Remove from oven and cool on wire rack"
Melt chocolate and veg. shortening. Dip ½ of each biscuit into chocolate mixture and place on foil to set. When choc. has set join with orange cream. (I skip the orange and add vanilla/ lemon juice/ hint of passionfruit pulp to 'cream' mixture).
Orange Cream:
Beat butter until smooth. Gradually add sifted icing sugar and beat until mixture is light and creamy. Beat in rind and
juice.
Makes approx. 20 'sandwiched' biscuits.
