No-Bake Cookie Balls
Prep 30 minutes

2 tsps instant coffee granules
6 ounces semisweet chocolate
1 1/3 cups finely crushed boxed vanilla wafers (about 3 dozen)
1 cup walnuts, toasted and finely chopped
3 tbsps corn syrup
2 tbsps dark rum or brandy (optional)
3 cups confectioner's sugar

In a cup dissolve the coffee in 1/3 cup boiling water and set aside.

In 3 quart saucepan, melt chocolate over low heat, stirring frequently. Remove saucepan from heat and with spoon stir in crushed vanilla wafers, walnuts, corn syrup, rum, or brandy (if using), coffee and 2 1/2 cups confectioner's sugar until blended.

Roll dough by tablespoons into balls. Roll balls in remaining 1/2 cup confectioner's sugar.

Store cookies in tightly covered container up to 4 weeks.

Makes about 4 dozen cookies
