.5 cup margarine
2 Tbsp sugar
1 tsp vanilla
1 cup pecans, ground
1 cup "cake" flour (1 cup regular flour, minus 2 Tbsp)
Cream margarine and sugar; beat in vanilla and flour. Stir in pecans. Chill until firm. FORM into 8" square slab about
1/2" thick. Wrap in waxed paper and ziplock bag. To bake, defrost in refrigerator and cut into 64 cubes with pizza
cutter. Roll each cube into a ball and place on baking sheet.
Bake in preheated 300 oven for 30 min., until lightly browned. Remove from oven and roll immediately in sifted
confectioners' sugar to coat. Cool coated cookies on newspaper as described above.
