Scots Shortbread
4 cups flour
1 cup sugar
1 lb. butter
Mix 3 cups flour, sugar and butter with hands and knead in remaining flouring. Divide into thirds, press into 3: 8" or 9" round cake pans. Prick with a fork and flute the edge's. Bake 325' for 45 minutes. Sprinkle with sugar and cut into wedge's immediately after removing it from the oven. Let cool completely in pans. Then remove.
(or spread the dough in a jelly roll pan and cut it into 1 1/2" squares.)
