Shortbread-Style Mincemeat Cookies
2 1/2 cups flour
1 teas. baking soda
1 teas. cream of tartar
1 cup butter or margarine, softened
1 1/2 cup confectioners sugar
1 3/4 cup prepared mincemeat
1 teas. vanilla
Preheat oven to 375.
Combine flour, baking soda and cream of tartar.
In large mixer bowl, beat margarine and sugar until fluffy. Add egg, mix well. Stir in mincemeat and vanilla.
Add flour mixture; mix well (dough will be stiff).
Roll into 1/4 inch balls. Place on ungreased baking sheets. Flatten slightly. Bake 10 to 12 minutes or until lightly browned.
