Sour Cream Pastries
1 cup margarine
2 cups sifted flour
1 egg yolk
.5 cup sour cream
.5 cups apricot preserves - sieve or chop large pieces of apricot
.5 cup flaked coconut
.25 cup finely chopped pecans
Mix margarine and flour with pastry blender until mixture is crumbly. Add egg yolk and sour cream and mix until dough forms a ball. Refrigerate until firm (FREEZE now).
To bake: Divide (defrosted) ball of dough into four pieces.
Roll out each fourth into a circle about 10" in diameter (do this one quarter at a time).
Spread one quarter of preserves on the circle, then sprinkle with one quarter of coconut and pecans. Using a pizza cutter, cut the circle into eighths, then roll up each piece as for a crescent roll (Start at the wide end and roll up towards the center of the circle.) Bake in preheated 350 oven for 20 minutes.
