Thimble Cookies
1/2 cup softened butter
1/4 brown sugar
1 tbsp. corn syrup
1 egg yolk
1 1/4 cup flour
1 egg white, slightly beaten
finely chopped walnuts
Cream butter and sugar and stir in syrup, egg yolk and flour. Roll dough into small balls about the size of a walnut.
Dip each ball in the egg white and roll in the chopped walnuts.
Place on a greased cookie sheet and indent the centre with your middle finger.
Bake at 325 deg. for 5 minutes and indent again (I use the handle of a wooden spoon to do this to avoid burnt
fingers!). Bake another 10 - 15 minutes.
When cool, fill centres with jelly or jam of your choice.
