Meringue Powder Cookie Icing
3 level Tblsp. meringue powder
4 cups sifted confectioners’ sugar (1 lb.)
6 Tblsp. water
Beat all at low speed 7-10 minutes (10 minutes with hand mixer) until icing forms peaks. For painting, thin icing with water until consistency of thick paint. Color as desired. Paint cookies with pastry brush. Let dry 2-3 hours. For paint details, thin paste icing color with clear vanilla and apply with brush. When sprinkling with sparkles or sugar, add before icing dries.
