Pressed Cookies Almond Macaroons

Almond Macaroons

1 1/2 lb. canned almond paste
1 cup powdered sugar
1 cup granulated sugar
1/2 cup ground, toasted blanched almonds
1/2 tsp. salt
1 tsp. cinnamon
grated rind of 1 orange
grated rind of 1 lemon
juice of 1 lemon
2 tsp. brandy
1/2 cup egg whites
glazed red cherries or blanched almond halves


Thoroughly grease and flour a baking sheet.

Cream the almond paste, then gradually add all remaining ingredients except the cherries or almond halves. Beat until the mixture is thick. Put into a pastry bag with a star point and squeeze bits out onto a baking sheet. Top each with a cherry or almond half. Cover and leave overnight. (Recipe does not specify whether to refrigerate at this point.)

In the morning, preheat to 325.

Bake for about 20 minutes or until lightly browned. They should be browned on the outside but soft and chewy inside.
