Pressed Cookies Jamboree

Jamboree

3 cups sifted flour
1/2 teaspoon salt
1 1/4 cups butter
1 cup sugar
2 eggs
2 tablespoons vanilla


Preheat oven to 375° F.

Sift together the flour and salt.

Cream the butter - gradually adding the sugar. Cream well. Blend in the eggs and vanilla, beat well. Gradually add the dry ingredients and mix thoroughly.

Press dough through cookies press onto ungreased baking sheets. Use star plate forcing about 3 inches of dough into an enclosed circle. (Use circular motion) **

Spoon 1/4 teaspoon apricot jam or marmalade into center of cookie. Sprinkle with finely chopped walnuts (about 1/3 cup in all).

Bake in moderate oven (375 degrees) 10 to 12 minutes until delicately browned.

Makes 7 dozen small cookies

Also if desired, drop cookie by rounded teaspoonfuls onto baking sheets. Dent center of each using back of teaspoon dipped in cold water and then fill with jam.
