Pressed Cookies Shortbread Cookies

Shortbread Cookies (the easy way!)

1 lb. butter, divided into two (454g)
2 1/2-2 3/4 cups all-purpose flour (625 ml)
1 pkg 2-layer white cake mix (Duncan Hines)


Pre-heat oven to 350 F

In small bowl, microwave 1 cup of butter on high for 1 minute or until just melted. Slice the remaining butter into small pieces and add to the melted butter. Stir until all of the butter is softened and pourable.
(Microwave a little more if needed but do not let the butter melt entirely, it should be creamy)

Mix flour and cake mix, blend well. Whisk the butter and then pour the butter into the flour and cake mix. Stir until stiff and all mixed. Either use a cookie press, or make 1" balls and flatten them on the cookie sheet. Bake approximately 11 minutes, until just golden at the edges.

Makes about 100 cookies.
