Pressed Cookies Swedish Macaroons

Swedish Macaroons

1 1/3 cups finely ground blanched almonds
1 1/2 cups powdered sugar
grated lemon rind
dash of salt
2 egg whites

Preheat to 300. Grease cookie sheets.

Mix the dry ingredients together, then add the egg whites and mix. Place dough in a pastry bag with a star tip and force onto cookie sheet.

Bake for 30 minutes. Remove from cookie sheet while still warm.

These should be light golden brown but soft inside.
