Rolled Cookies Apricot Filled

Filling- 1 pkg. (11oz) stewed apricots, 1/2 cup of apricot juice, 1 cup of raisins, 1 pkg. (12oz) pitted dates

To make the filling- stew the apricots and then take the apricots and 1/2 cup of juice from the stewed apricots and add the raisins and dates and put thru a food grinder. When the filling is cool, add 1 cup of finely chopped walnuts and a 1/2 cup of sugar to it.

Cookie dough ingredients- 2 cups b.sugar, 1 cup shortening, 4 cups of flour, 1/2 cup of milk, 2 eggs, 1/2 tsp. of baking
soda, 1/2 tsp. of salt, and 2 tsp. baking powder

To make cookie dough- cream sugar, shortening & eggs. Sift flour, salt, baking powder & salt together. Add to creamed mixture with milk. This dough is quite rich, so only use a piece the size of a tenis ball at a time.

Use plenty of flour to roll out and cut with a 2" cookie cutter. Put 1 tsp. on each cookie bottom & cover with another cookie top, sealing edges with a fork.

***Make sure you roll the dough out thin!*** Pick up with a floured spatula and place on a cookie sheet and bake for
about 12 minutes in a 375 degree oven.
