Rolled Cookies Cappuccino Blossoms

BASIC RECIPE

1 1/2 cp flour
1/2 tsp baking powder
1/4 tsp salt
3 Tblsp unsalted butter
3 Tblsp margarine
1/2 cp granulated sugar
1 egg
1/2 tsp vanilla

Sift together flour, baking powder and salt on piece of waxed paper.

Beat together butter, margarine and sugar in bowl until creamy. Beat in egg and vanilla until well blended. Stir in flour
mixture.
Shape into disk; wrap in plastic wrap; refrigerate several hours or overnight.

Heat oven to 350*. Coat baking sheet with nonstick cooking spray.

Roll out dough on lightly floured surface to 3/8" thickness. Cout into rounds with 2 1/2" cokie cutter; reroll scraps.
Place on prepared baking sheets, spacing 1 1/2" apart.

Bake in 350* oven 10 to 12 min. or until lightly browned at edges. Remove cookies to wrie rack to cool.

Cappuccing Blossoms

Prepare Basic Recipe, with the following changes: Add 2 tsp instant espresso coffee powder and 1/4 tsp cinnamon to
flour mixture.

Fill cookie gun fitted with flower template, or pastry bag fitted with large star tip, with dough. Press out or pipe dough onto ungreased baking sheets.

Bake at 350* 10 to12 min. Cool on wire racks. Spoon small dab of white frosting on each cookie and top with chocolate-covered coffee bean.

Makes about 2 dozen.
