Chocolate Molasses Cups
Crust:
2 cups flour
1 teaspoon salt
2/3 cup butter
1/4 cup water
Filling:
1/2 cup Molasses
2 eggs
1/4 cup sugar
1/2 cup chopped walnuts
One 6 ounce package (1 cup) Semi Sweet Chocolate Morsels
Confectioners' sugar
Prepare crust:
Preheat oven to 350 degrees F.
In bowl, combine flour and salt. Cut in butter until mixture
resembles coarse crumbs.
Sprinkle water over mixture. Stir until dough forms ball. Divide dough in half.
On lightly floured board or pastry cloth, roll dough 1/8 inch thick.
With 2 1/2 round cookie cutter, cut out circles.
press into bottom and up sides of mini-muffin pans. Repeat with remaining dough. Set aside.
Prepare filling: In bowl, combine molasses, eggs and sugar; beat until smooth.
Stir in morsels and walnuts. Spoon into pastry lined cups, filling 2/3 full.
Bake for 20 to 25 minutes. Cool completely.
Remove from pans. Sprinkle with confectioners' sugar.
Makes 3 dozen cups or bars (see below).
To prepare as into bars, press dough into 9 x 13 pan going 1/2 inch up ides.
Pour filling over crust and bake at 350 for 30 minutes.
Cool and sprinkle with confectioners' sugar. Cut into 36 bars.
