Cinnamon Pecan Cookies
1 1/4 cups unsalted butter, room temperature
2/3 cup granulated sugar
2 cups unbleached all-purpose flour
1 3/4 cups ground, toasted pecans
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 teaspoon grated lemon rind
Cream butter and sugar with a mixer until light and fluffy. Beat in flour, pecans, cinnamon, vanilla and lemon rind. Wrap dough in plastic; refrigerate at least an hour.
Preheat oven to 350 degrees.
On a lightly floured surface, roll out dough to 1/8-inch thickness. Cut into desired shapes with cookie cutters; place on greased cookie sheets. Bake 10 to 12 minutes, until lightly browned. Makes about 2 dozen cookies, depending on cookie-cutter size.
