Cookies Gingerbread

Gingerbread Cookies

Makes 4 dozen

2/3 cup butter (softened)
1 cup white sugar
1 level teaspoon each of salt, cinnamon, nutmeg and cardamom
1 tablespoon ginger
2 beaten eggs
1 cup dark molasses
1 tsp baking soda
5 cups flour

Cream butter and sugar together until fluffy. Add spices, one at a time, beating well after each addition. Add eggs and blend well.

Heat molasses add baking soda stir well while adding this to the molasses as it foams up a bit then add to butter mixture.

Add flour slowly, mixing until a soft dough forms.

Chill dough 1 hour, roll out, cut out, and bake in preheated oven at 350 for 8-10 minutes
